GREEK / OLYMPIAN PIZZA RECIPE...& DELICIOUS GREEK WINES


Ingredients  

  • Whole-wheat crust dough
  • 1 medium onion, thinly sliced
  • 2 tsp. Greek extra virgin olive oil
  • 1 tsp. garlic
  • 8-10 C. spinach leaves
  • 1 tsp. lemon juice
  • 3 medium tomatoes, chopped
  • 1 red pepper, thinly sliced
  • 1 small can artichoke hearts, about 2/3 cup                                                
  • 1 small can sliced Kalamata olives
  •  Feta cheese
  •                                                                                             
  • oregano, rosemary, basil, pepper

How to make your home-made Pizza

  • Roll the dough out on a large oiled pan. Pre-bake the dough at 450 degrees for about 10 minutes.
  • Saute onion in olive oil. Add garlic, salt & pepper after 4-5 minutes. Transfer to bowl.
  • Heat a little more oil in the pan and wilt the spinach with a little more garlic. When spinach is wilted but still bright green (about 1 minute), put it in a strainer to cool. Squeeze out excess moisture, then coarsely chop it and toss with lemon juice.
  • Brush the dough with olive oil and sprinkle with garlic. Layer onions, spinach, tomatoes, red pepper, artichoke hearts, olives, feta and sprinkle with spices.
  • Bake pizza at 500 degrees 12 minutes or until cheese is melty and brownish.
  • Take a bottle of your beloved Greek Wine- preferably a fresh Agiorgitiko - and let the feast begin!!
