Excellent news for Lafazanis Winery, as its Retsina was recently approved by ALKO the Finnish monopoly stores and the Finnish consumers will have the chance to enjoy it this Summer.
 
Retsina is a unique wine made  exclusively in Greece since ancient times.It is made with a base of white wine that is flavored with pine resin. Τhe Greeks have been making and drinking it for over three thousand years. According cooking experts, Retsina is the "Quintessential Mediterranean wine" and  applauding it as a perfect accompaniment for all types of Mediterranean cuisine. Ιt is undeniably at its best when combined with Greek foods, especially the savory mezedes (Greek Tapas) served as appetizers.
The name for Retsina is derived from a Latin word, Resina. The official explanation for the drink has it roots in early wine making practices. Lacking airtight containers for fermentation, many early white wines soured as a result of exposure to oxygen. To stave off this problem, the ancient wine makers covered their wine jugs in pine pitch, the same material used to waterproof boats. The pitch effectively sealed the containers so that the wine did not spoil and consumers developed a taste for the resulting resinous wine. Due to the pine oils, Retsina was thought of as wood nymph tears, though how it was collected from those shy nymphs is not recorded.
In recent years, many of the retsinas are less resinous than they were, as both young Greeks and tourists turn away from the strong pine flavor.

SPRING ASPARAGUS SALAD RECIPE & GREEK WHITES



 
Spring is the time of the asparagus and today, we have chosen an easy recipe to enjoy with a fresh and aromatic white wine of your choice; This is a nice and simple cold salad that is nothing more than asparagus dressed in a Chinese -influenced vinaigrette topped with sesame seeds.

It's a great way to celebrate the arrival of the asparagus crops!


 
 
Ingredients  (Original recipe makes 1 1/2 pounds)
 
1 tablespoon rice vinegar

1 teaspoonred wine vinegar

1 teaspoon soy sauce

1 teaspoon white sugar

1 teaspoon Dijon mustard

2 tablespoons peanut oil 

1 tablespoon sesame oil

1 1/2 poundsfresh asparagus, trimmed and cut into 2-inch pieces

1 tablespoon sesame seeds


Directions

1. Whisk together the rice vinegar, red wine vinegar, soy sauce, sugar, and mustard. Drizzle in the peanut oil and sesame oil while whisking vigorously to emulsify. Set aside.


2. Bring a pot of lightly-salted water to a boil. Add the asparagus to the water and cook 3 to 5 minutes until just tender, but still mostly firm. Remove and rinse under cold water to stop from cooking any further.


3. Place the asparagus in a large bowl and drizzle the dressing over the asparagus. Toss until evenly coated. Sprinkle with sesame seeds to serve.

 

4. Choose your favorite Greek white wine, preferably either a fresh  100% Sauvignon Blanc or blended with other white grapes as  Chardonnay and  Semillon ; for those about to experiment with Greek  indigenous grapes we strongly recommend a fresh Moschofilero from the region of Mantinia, Peloponnese!
