PETIMEZI...the Greek answer to the Italian Balsamico












Petimezi in a few words, is the sweet outcome of the condensation of the must from the matured grapes.




For centuries, Greeks are using Petimezi for its nutricious elements & rich taste.




Today it can is used as a siroup on icecream & yogurt, as a refreshment (1 dose petimezi / 4 doses of water) and in a number of delicious recipes !!


PETIMEZI by LAFAZANIS WINERY is an excellent product, carefully made of Agiorgitiko grapes in Ancient NEMEA.








Below you will find 3 of them in Greek and if you're curious to experiment next weekend,all you can do is ask me to send them to you in English...

Χοιρινό φιλέτο με πετιμέζι


(Pork Fillet with Petimezi)
Υλικά
-4 χοιρινά φιλέτα
-100 γρ πετιμέζι
-200 γρ σάλτσα ψητού
-50 ml κόκκινο κρασί
-αλάτι, πιπέρι
-λίγες ρόγες σταφυλιού

Εκτέλεση
Αλατοπιπερώνουμε τα φιλέτα και τα ψήνουμε ολόκληρα στους 180 βαθμούς για 20 λεπτά.
Φτιάχνουμε ένα μείγμα, βράζοντας το πετιμέζι και το κρασί με τη σάλτσα ψητού, μέχρι να δέσει καλά.
Περιχύνουμε τα φιλέτα με το μείγμα αυτό και προσθέτουμε λίγες ρόγες σταφυλιού.






Κοτόπουλο με πορτοκάλι και πετιμέζι


(Chicken with orange & Petimezi)
Υλικά
-Κοτόπουλο σε μερίδες
-200ml πορτοκαλάδα
-1 κουταλιά της σούπας μουστάρδα
-2 κουταλιές της σούπας πετιμέζι
-ελαιόλαδο
-αλάτι
-πράσινα πιπέρια ολόκληρα

Εκτέλεση
Βάζουμε το κοτόπουλο σε ένα ταψάκι.
Σε ένα μπωλάκι χτυπάμε τη μουστάρδα, τη πορτοκαλάδα, το λάδι και το πετιμέζι.
Περιχύνουμε με αυτό το μείγμα το κοτόπουλο.
Αλατίζουμε και ψήνουμε στους 180-200 βαθμούς για περίπου 1-1,5 ώρα, προσθέτοντας νερό όταν χρειαστεί.




Κατσικάκι με χυλοπίτες και ανθότυρο


(Goat with papardelle, soft cheese & Petimezi)
Υλικά
-1300 γρ κατσίκι (σπάλα ή μπούτι)
-1 φλυτζάνι τσαγιού ελαιόλαδο
-2 σκελίδες σκόρδο
-2 κρεμμύδια τριμμένα
-1 κιλό ώριμες ντομάτες ξεφλουδισμένες
-200ml λευκό κρασί
-2 κουταλιές σούπας πετιμέζι
-κόκκινο γλυκό πιπέρι
-αλάτι χοντρό
-φρέσκο τριμμένο πιπέρι

Εκτέλεση
Καθαρίζουμε καλά το κρέας και το ζεματάμε σε νερό που βράζει, αφαιρώντας σχολαστικά τον αφρό. Βγάζουμε με τρυπητή κουτάλα τα κομμάτια του κατσικιού και τα αφήνουμε στην άκρη.
Ζεσταίνουμε σε κατσαρόλα το ελαιόλαδο και ροδίζουμε το κρεμμύδι ώσπου να γίνει διάφανο, οπότε ρίχνουμε το σκόρδο και ροδίζουμε για άλλα 2 λεπτά.
Προσθέτουμε το κρέας και σωτάρουμε, ώσπου να πάρει ένα χρυσοκαφετί χρώμα. Προσθέτουμε το κρασί με το πετιμέζι και τις ντομάτες και αλατοπιπερώνουμε. Σκεπάζουμε την κατσαρόλα και ψήνουμε σε χαμηλή φωτιά για περίπου 1 ώρα και 45 λεπτά.
Βγάζουμε το κρέας από την κατσαρόλα, αραιώνουμε τη σάλτσα και ρίχνουμε μέσα τις χυλοπίτες να βράσουν για 6 λεπτά.

NEMEA LAFAZANIS a real Greek classic....





Type : V.Q.P.R.D. NEMEA Dry Red Wine
Varietal Composition-Vineyards : 100% Αgiorgitiko grapes from Ancient Kleones & Ancient Nemea region.
Vinification Method : Classic red vinification for 4-6 days and aftewards the wine matures in new french oak barrels for 12 months.
Characteristics : Deep red color with complex aromatic bouquet of red matured fruits, vannila and tobacco. Rich in taste with very soft tannins and a long lasting aftertaste.
Alcohol level : 13% vol.
Serving Temperature : 16-18 C
Taste Harmony : Ideal with game, grilled or stewed fillet & spicy yellow cheeses.

Vinification methods: Pre –fermentative extraction applied to the 70 % of the whole quantity. Post – fermentative stirring of fine lees.

Characteristics: Two grape varieties from the Wine Art Estate vineyards combine their distinctive qualities. The Sauvignon Blanc offers rich fragrances of mature summer fruit, with a keen taste, while the Assyrtiko provides sharp taste, richness and inner structure. The two varieties blend in an elegant and harmonious combination.
The white TECHNI ALIPIAS is an ideal match especially with dishes of intense flavour and aroma, such as seafood, fish, shells or exotic cuisine.
