Sea Bass from the Aegean with Greek Chardonnays



Summer in Greece &  seafood is at its best; one can easily enjoy - without necessarily spending a fortune -  really fresh fish such as Sea Bass (lavraki) -  which is actually my favorite - especially when I have a bottle of a Greek Chardonnay - either as a monovarietal or blended with an indigenous grape to accompany it !!

SUMMER DREAMING WITH GREEK TRADITIONAL SOUVLAKI & RETSINA




Souvlaki is a notorious Greek specialty made with tender cuts of meat, either pork or chicken.

In this pork recipe, the meat is marinated in a lemony olive oil mixture.

Serve it with a fresh cut Greek salad and complete the feast with a bottle of chilled Retsina (a traditional Greek dry white wine made with the addition of a small portion of pine resin)



    What you need
    1 lemon, juiced
                                                1/4 cup of Greek olive oil
    1 teaspoon of dried oregano
    3 cloves of garlic (crushed)
    4 pounds pork tenderloin  cut into 1 inch cubes
    2 medium yellow onions cut into 1 inch pieces
    2 green or red bell peppers  cut into 1 inch pieces
    skewers

 
How to prepare it
   
      In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
     Preheat the grill for medium-high heat. Thread pork, peppers and onions onto skewers.
    Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
